This cosy underground speakeasy, Operation Dagger, could very well be a Moma gallery: the work of Swedish artist Jonas Dahlberg inspires the CCTV camera installation in the toilet, and a cloud of light bulbs at the bar is a nod to Jeff Wall’s Invisible Man. As winner of the Best New Bar title at this year’s Singapore Bar Awards, its concoctions are just as inspired and experimental. Case in point: A cocktail named Bee Pollen, an intoxicating mixture of bee pollen rye, thyme, oak, dark chocolate and dark lemon.
How to get here: Look for an unobtrusive symbol of a rectangle overlaid with one that has jagged edges and head down the stairs – you’ll be in for a treat. Opens from 6pm till late, Tues-Sat.
