Signature Dish: Chen’s Mapo Doufu, an original Chen family recipe using doubanjiang (chilli broad bean paste) that is fermented for three years. The tofu is stir-fried in hot Sichuan pepper-flavoured meat sauce, and thee end result is a soft and silky tofu dish that is best enjoyed when paired with a bowl of fragrant Hokkaido rice.

Signature dish: Marinated Botan Shrimp with Sea Urchin and Caviar – A botan shrimp from Japan is topped with sea urchin. The two are bound with a bit of barely-cooked egg yolk. On top is a generous scoop of Oscietra caviar and the dish is served in a hollowed-out sea urchin shell.

Price: Apetit menu ($208++, $288++ and $308++); 16-course degustation dinner ($438++) and eight-course vegetarian menu ($208++).

Signature dish: Beef châteaubriand and foie gras, “Rossini” style –  a ballotine of roasted medium rare beef tenderloin and foie gras with truffles, port wine reduction and beef jus. The dish is also served with pommes soufflées which are puffy slices of deep-fried potato. It takes five hours to prepare this dish.

Opening hours: Tuesdays to Saturdays – Dinner, 6pm – 10.30pm, last order. Saturday Lunch, 12pm – 2.30pm, last order. Closed on Mondays and Sundays except on public holidays.
