The new P.S Cafe at One Fullerton might be the talk of the town, but here’s another hip restaurant that’s making a huge comeback in the same area. Overeasy Fullerton marks its eighth year as Singapore’s ultimate all-American diner, and what better way to commemorate it than with a newly revamped space and updated menu?
Designed by Hui Designs, the renovated restaurant reflects a modern interpretation of the classic American diner, heavily influenced by the edgy, vibrant spirit of the 60s and 70s. The diner is decked with swanky, retro decor – think cherry red-checkered floorboards contrasted with powder blue diner booth seats, cheeky neon signages peppered around the store and old-school arcade machines. It aims to imbue a surreal movie-set quality with a distinctive light box above the bar counter, akin to the retro motion picture cinema signage.
Besides its interior, the new menu is also something definitely worth getting excited for. The Lo & Behold Group’s culinary director (and award-winning chef), Daniel Sia, leads the menu overhaul with new hearty brunch sets, tantalising mains and sugary desserts. A sophisticated spin on the diner staple, this features succulent Maine lobster doused with a white wine and lobster shell broth, served with macaroni and a creamy mix of parmesan and gouda cheese. Yum.
This is first seasoned with a special blend of spices and sous-vide for more than 12 hours to achieve a tender, pull-off-the bone texture. The pork ribs are then baked in a smoky housemade barbeque sauce and served with charred romaine and grilled corn.
This Southern classic features a crispy buttermilk fried chicken thigh, crunchy Japanese cucumbers, housemade coleslaw and chipotle mayo, sandwiched between buttery brioche buns.
Besides mains, the diner’s sharing plates menu has also been renewed for a better communal experience. Made with Maine lobster, finely shredded potatoes, chives and served with a refreshing aioli dip, here’s a dish that will definitely speak to all seafood lovers, in particular, lobster.
The smoked cheddar hot dog is wrapped in a jalapeno-cornmeal batter and is paired with its housemade sriracha mustard for that extra kick.
Better known as Overeasy’s rendition of the iconic Los Angeles breakfast sandwich, this comes with a delectable combination of scrambled eggs, streaky bacon, red cheddar, caramelised onions and chipotle mayo.
Sandwiched between toasted English muffins, this burger is stacked with a sunny-side up egg, breakfast ham, double smoked bacon, premium wagyu chuck blend patty, rosti, red cheddar and sweet chili sauce.
The best way to end a meal is with a sweet treat. And if you love everything chocolate, here’s the dessert to get. Comprising of crumbly dark chocolate shortbread filled with creamy white chocolate, this all-time American favourite comes paired with the diner’s signature oreo milkshake.
But if you prefer something lighter (and healthier), then opt for this guilt-free acai bowl. It is made with organic acai berries and coconut water, topped with mixed berries, fresh tropical fruits and toasted granola for that perfect crunch.
